Our Story
In a small kitchen in Colorado Springs, my mother made mandu the same way every single time — by feel, by memory, and with love.
She never wrote the recipe down. She didn’t need to. The way the dough stretched between her fingers, the exact amount of sesame oil, the moment the filling tasted right — it was all hers. It was the taste of home, even when home was far away.
At nineteen, she left everything behind in South Korea to start a new life in America with my father, who was stationed there with the Air Force. Though their story took an unexpected turn, she raised my younger brother and me with extraordinary grace and sacrifice. As a single mother, she poured everything into us — school runs, home-cooked meals every day, laundry, comfort, and strength — even through financial hardship and losing our home, twice.
I’m Michael, the oldest son. I’m thirty now, and I deliver mail every day in the same Colorado Springs community that raised me. The post office gave me a real chance, and I’ve never looked back. It taught me service, pride, and what it means to show up for people.
Mama Mandu carries both legacies. “Mama’s Mandu” — the secret recipe she made for us with nothing but love. And “Mailman’s Mandu” — the dream I’m building to share it with the world. We make them the way she taught us: beef-filled and fried until they’re golden, crispy, and deeply savory.
